Beef Pot Roast

INGREDIENTS

  • 1 lb (454 grams) AngusPride® boneless beef chuck roast
  • 2 tsps (10mL) olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp (5mL) salt
  • ½ tsp (2.5mL) freshly ground black pepper

INSTRUCTIONS

  1. Add oil and sear meat in the center of the pan for 4 minutes. Turn meat over with tongs; sear all sides for 3-4 minutes on each side.
  2. Remove from pan.
  3. Arrange onion, garlic, and 1 bay leaf in the bottom of the pan; sprinkle with salt and pepper.
  4. Return meat to pan, place remaining bay leaf on top of meat and cover.
  5. Cook in the oven for 30 minutes at 325°F (163°C). Reduce the heat to 300°F (149°C) and continue cooking for 1-1/2 hours.
  6. Remove roast to a platter to rest for 10 to 15 minutes. Slice, and top with onions and gravy.
