Remove steaks from refrigerator, then prepare rub. Combine all ingredients for rub in mixing bowl.
Season both sides of steaks liberally and let sit for 10 to 15 minutes. Place steaks on rack, then place rack on sheet pan. Set aside any remaining butter for compound butter to baste steaks. Recipe below.
Preheat oven to 200°F. When oven reaches desired temperature, place steaks in oven and cook until they reach minimum internal temperature of 120°F (approximately 1 hour).
Use meat thermometer to monitor temperature. Try to avoid opening and closing oven door as heat will escape. If possible, use probe that allows you to insert prior to placing in oven as this will be most efficient.
While steaks are in oven, make chipotle lime compound butter. Place softened butter in mixing bowl and add remaining ingredients. Mix thoroughly, then leave at room temperature.
With approximately 10 to 15 minutes of cook time remaining, place cast iron skillet or sauté pan on stovetop and place on high heat. This will allow skillet to reach high temperature in order to quickly sear steaks on both sides.
Once steaks reach 120°F, remove from oven and allow to rest for 5-10 minutes before searing.
Brush small amount of olive oil on both sides of steaks. Place in pan and sear on both sides for 45 seconds to 1 minute. Remove from pan and allow steaks to rest for 5 minutes.
Once steaks have rested, top with chipotle lime butter and plate with favorite side dish.
