Mix salt, pepper, thyme, garlic powder, and onion powder together to make seasoning mixture, then rub evenly onto brisket. Place brisket in crock pot.
Pour vinegar and BBQ sauce over brisket. Add frozen cherries and cover.
Cook on low setting for 8 to 10 hours until brisket is tender. Cooking on high will yield a tougher brisket.
Remove brisket from crock pot and let rest on cutting board for 10 to 15 minutes.
Pour the remaining sauce from the crock pot into a sauce pan and cook over medium heat until it thickens. Use hand mixer to blend cherries into smaller pieces.
To serve, slice brisket thinly across the grain. Serve the extra sauce on the side for extra dipping.
